Rock you rockets RIGHT ROCKIN OFF

I just HAVE to share this with you.

My favorite soup “Cauliflower Avocado Rocket Puree”.

Not only is it super delicious, it is also ZONE fodder and full of good fat from the avocado and lots of minerals from the veg, AND it is EASY-PEASY takes about 5 minutes to make, AND it will keep in the fridge for several days so you can just KEEP-ON-SLURPIN’….

Here we go…

In one medium sized soup pot place and simmer covered on low heat until tender about 1 to1.5 hours;

One head of Cauliflower whole
About 1.5 to 2 liters of water (4-6cups)
A few onions, shallots, or leeks
Some small new potatoes (4-5) rinsed skin on
About 1 tablespoon of powdered stock, beef, chicken or veg take your pick

When vegs are soft puree the entire mess with a hand held blender and add

1-2 ripe avocadoes pitted and peeled (I figure you would already know the pitted and peeled part….)
1-2 large handfuls of washed water cress or rocket (to taste)
Salt and pepper to taste

Puree again until the avacodo is smooth and the rocket or watercress are just little flecks. Delish also served with a gob of (fat free) sour crème or yoghurt…

Now wasn't that EASY....? And isn't it GOOD!

OK...I really really want to make this, but what the heck does watercress or rocket look like??

hmmm that sounds good - but way to healthy! LOL at 'what does watercress and rocket look like" - shocking - it is because she reads all those 'fiction' books.
